Summer has arrived in the UK, finally! We got excellent summer weather in the past days, its sunny, it’s hot and that means heavy food is a no go, well at least for me. I personally prefer lighter and fresh meals during this time of the year.
Rhubarb is in season right now and I bought some the other week not really knowing what to do with it. I never used or cooked rhubarb before, but I always love trying new fruits and veggies.
I found a rhubarb and carrot salad recipe from High Fearnley – Whittingstall in one of his cooking books “River Cottage FRUIT everyday!” that I gave a go yesterday.
I had no high expectations for this salad, but man was I wrong! This salad is so delicious and refreshing. The rhubarb was rather tender and had a zingy sort of citrusy taste to it, which goes well with the other ingredients including walnut, carrots and feta cheese.
It went down a treat and was gone in no time. It will certainly become a staple in my household.
Delicious and Refreshing Raw Rhubarb and Carrot Salad
Ingredients (Serves 2 as a side salad):
- 125 g Carrots
- 125 g Rhubarb
- 75 g Soft White Cheese such as Feta or Goats Cheese
- 25 g Crushed Walnuts
- 3 Tbsp Olive Oil
- 1 Tsp Cider Vinegar
- 1 Tsp Dijon Mustard
- 1 Tsp Honey
- Salt and Pepper


Preparation:
- The first task is to prepare the dressing. Mix the olive oil, mustard, honey, vinegar and salt and pepper together until well combined. If you don’t have cider vinegar you can use normal vinegar, too. That’s what I did, although the original recipe calls for cider vinegar. Leave to stand for about 10 min.
- Peel the carrots and grate them coarsely or cut them into thin strips, sort of resembling matchsticks. Next prepare the rhubarb.
- Rhubarb can be a bit stringy like celery due to the fibres. Therefore, it’s good to remove the outer tougher layer. I peeled it with a knife. Once prepped, cut into thin slices, add to the carrots, pour over the dressing and mix well.
- Arrange the salad on a large plate and sprinkle over the walnuts and crumble over the cheese, whichever you are using. I used feta.
- Finish of the salad with a last sprinkle of pepper and enjoy!
