During summer when it is hot, I personally prefer lighter food and opt for wraps, salads, cold soups and dips with fresh crudites.
I read about adding herbs to dips and thought I would give it a go. I had some leftover parsley and basil that needed to go and came up with this herb hummus.
It is a fresh and healthy hummus with a twist that is super easy to make. If you are bored of normal hummus give this variation a go.
Ingredients for one bowl:
- 1 Can of Chickpeas without water
- 2 Cloves of Garlic
- 2 Spring Onions
- Handful of Fresh Basil and Parsley
- 2 Tbsp Olive Oil
- 2 Tbsp Water
- 2 Tbsp Tahini
- Juice of Half a Lemon
- Ground Cumin
- Salt and Pepper
Preparation:
This must be the simplest recipe in terms of preparation I have posted on my blog.
Chop the herbs, garlic cloves and spring onions a little and squeeze out the lemon. Throw all ingredients into the food processor and blend. Done.
I like to eat my hummus with crackers or in a wrap with some greens.
